Significance
The tradition of eating sweet foods for Rosh Hashanah, the celebration of the Jewish new year, can be traced back to the ancient Jews. The sweetness of the honey was eaten in hopes of being blessed with a sweet new year, and the apple has symbolic meaning in the Jewish faith as it symbolizes the Garden of Eden. Nowadays there are many traditional recipes that include these and many other sweet foods, but this apple honey cake is a great take on the more traditional honey cake. It is best eaten after having cooled for a least several hours and will still be delicious after a few days after a few days so feel free to bring your friends or coworkers a slice!

Preparation:
1) Preheat the oven to 160 °C.
2) Grease a round 25 - 30 cm baking dish with some extra butter and set aside. Dice the apples into cubes about 1 cm squared. the size of
3) Mix dry ingredients (flour, baking powder, cinnamon, cardamom, nutmeg, salt) in a medium size bowl.
4) In a separate large bowl, whisk together the softened butter and sugar for a few minutes until smooth. Add eggs, vanilla extract, lemon zest, and honey and whisk to combine.
5) Slowly add the dry ingredients to the wet ingredients stirring as you do so until all of the flour is added. When the batter is combined, add the apple cubes and fold them evenly into the dough.
6) Put the walnuts into a ziploc bag and hit with a pan or other hard object to break into smaller chunks.
7) Pour the batter into the greased baking dish and sprinkle the walnuts over top.
8) Bake for 1 hour 30 minutes or until a toothpick inserted into the middle of the cake comes out clean.
